Use du with one person you know. Use Sie for a polite first approach. The verb has to match.
Anya meets a classmate and then orders at a café. To the classmate she knows, ‘Kommst du mit?’ is natural. To the server she has just met, ‘Kommen Sie mit?’ is the safe polite line. Sie is always capitalised when it means ‘you’. The pronoun and the verb stay a pair: du kommst, Sie kommen.

Do not mix the pair: ‘Sie kommst’ and ‘du kommen’ are both wrong. Sie can also mean ‘they’ or ‘she’, written in lower case; the capital letter is the ‘you’ form. If someone offers du, you can switch. Until then, Sie is the respectful start with a stranger.
Walk through the café door. Anya sees her classmate and asks ‘Kommst du mit?’ One person she knows, so du and kommst stay together. At the counter she turns to the server she has just met and asks ‘Möchten Sie einen Kaffee?’ Sie is capitalised, and möchten matches Sie, not du. Later she asks the new teacher ‘Wie heißen Sie?’ The same polite pair: Sie plus heißen.
Do not change only the pronoun. ‘Sie kommst’ mixes a polite pronoun with the du verb. Keep each pair: du kommst, Sie kommen; du heißt, Sie heißen; du möchtest, Sie möchten. Write the polite ‘you’ as Sie, not sie. A German speaker may offer du later; until they do, Sie is the respectful start.
